3 Words to Describe Your Food Truck: “Fresh Fish Market”
What inspired you to start your food truck: My family started Flying Fish Company in 1979 in my hometown Sandpoint, Idaho. As a kid I grew up helping with the family business. I studied aquaculture in college at an Oceanographic institute, then after the economy crashed in 2006-2008 I couldn’t find a job elsewhere so I started my own Flying Fish Company out of a mobile truck. I now have a permanent location in SE Portland, Oregon and the mobile fish truck. Additionally we sell at farmers markets in Portland and wholesale to local organic grocery stores and restaurants. My family still operates our original location in Sandpoint, Idaho and we have additional Flying Fish locations in Durango, Colorado and Park City, Utah.
What do you think sets you apart from the other food trucks in your area: Nobody else sells fresh fish from a truck. We are primarily a fresh fish market selling raw product but we make our own smoked salmon and other ready-to-eat products that can be purchased for immediate consumption. We also specialize in selling 100% certified sustainable seafood, not your product of China crap that you get in the grocery stores. We work with local farmers for grass fed beef, lamb, buffalo, elk, venison, goat, and pasture raised chicken pork, and farm eggs. All this is available from our truck and our permanent location.
What’s been your most complimentary customer feedback: “Who knew what great treasures lay in a fish truck?! I came home with the most amazing cut of sashimi grade tuna, fresh wasabi and non-homogenized, low vat pasteurized milk. And the best part is that this truck is walking distance from my house. Color me happy!!!” – Jeannie Osburn
